2 cups buttermilk
3 garlic cloves , minced ( or pressed )
2 chipotle chiles , seeded and minced ( canned chipotle chiles in adobo sauce )
1 tablespoon adobo sauce
1 orange , zested
1/4 cup orange juice
1 tablespoon kosher salt ( or less to taste )
1 teaspoon fresh ground black pepper
3 lbs chicken wings ( tips trimmed and divided into flat portion and drumettes )
4 tablespoons agave syrup ( or maple syrup )
1 garlic clove , minced
1 teaspoon Tabasco sauce
2 tablespoons adobo sauce
1 1/2 teaspoons apple cider vinegar
3 tablespoons olive oil
1/4 teaspoon kosher salt ( or to taste )
1 cup Mexican crema ( creme fraiche or sour cream )
1/2 cup queso fresco , crumbled ( or a mild feta cheese )
2 tablespoons freshly squeezed lime juice
2 tablespoons cilantro leaves , chopped
2 tablespoons chives , chopped

Instructions

1.In a large bowl, whisk together buttermilk, minced garlic, minced chipotle chiles, adobo sauce, orange zest, orange juice, kosher salt and black pepper.
2.Add chicken wings and toss with the marinade. Cover and chill in the refrigerator for at least 2 hours and up to 24 hours.
3.Preheat your oven to 425°F. Line a baking sheet with foil and place a wire rack on top. Remove chicken wings from marinade and place them on the wire rack.
4.Bake wings for 20-25 minutes or until crispy and golden brown.
5.In a small bowl, mix together agave syrup, minced garlic, Tabasco sauce, adobo sauce, apple cider vinegar, olive oil, and kosher salt. Brush this mixture over the baked chicken wings.
6.Return the wings to the oven on the top rack and broil for 2-3 minutes, or until the glaze becomes caramelized.
7.Meanwhile, whisk together Mexican crema, crumbled queso fresco, lime juice, cilantro leaves, chives, kosher salt, and fresh ground black pepper. Serve the chicken wings hot with the crema dip, carrot sticks, and celery ribs on the side.
