Ingredients

1 ounce dried black mushroom
warm water
2 teaspoons vegetable oil
1 large onion , coarsely chopped
2 garlic cloves , minced
2 cups button mushrooms , sliced
2 cans chicken broth ( try fat free or reduced sodium )
2 ounces cooked ham , cut into thin slivers ( or use cooked pork or chicken )
1/2 cup green onion , thinly sliced on the diagonal ( scallions )
1 tablespoon soy sauce ( try reduced sodium )
1 tablespoon dry sherry ( try substituting dry white wine or beer )
1 tablespoon cornstarch
This traditional Chinese soup uses different types of mushrooms in a broth that is savory and satisfying. The earthiness and umami flavors of the mushrooms are complimented by a rich but simple broth with soy sauce, sherry, and scallions. Instructions

1.Place the black mushrooms in a bowl and pour warm water over them. Let them soak for 30 minutes.
2.Remove the mushrooms from the water, squeezing out any excess. Cut off and discard stems; slice the caps thinly and set aside.
3.Heat oil in a large soup pot over medium-high heat. Add onion and garlic; stir-fry for 2 minutes.
4.Add button mushrooms; stir-fry 2 more minutes. Add chicken broth, cover, bring to a boil, then reduce heat and simmer 10 minutes. Add the sliced black mushrooms, cooked ham, and scallions.
5.Combine soy sauce, sherry and cornstarch in a small cup; add to soup.
6.Bring soup back to a boil, stirring constantly. Simmer until heated through and slightly thickened, and serve hot.
