Ingredients

1 whole turkey
1 tablespoon salt
1 teaspoon crushed roasted sichuan peppercorn
4 cups glutinous rice ( naw mai )
water
2 links pork sausage , Chinese , slice half moon
3 links duck liver sausage , Chinese slice half moon
1 1/2 lbs Chinese barbecue pork , small cubes
1/8 cup dried shrimp , presoak
6 black dried Chinese mushrooms , presoak and 1/4 inch cube
1/4 cup radish , salted , Chinese , small cubes
1 cup water chestnut , 1/4 inch cube
1/4 cup bamboo shoot , soak and cut into 1/4 inch cube
1/2 cup frozen green pea
oil
garlic powder
onion powder
salt
white pepper
oyster sauce
pine nuts
Chinese Turkey with Naw Mai Fun Stuffing is a unique twist on traditional turkey recipes. The glutinous rice stuffing is packed with Chinese flavors, including pork sausage, duck liver sausage, Chinese barbecue pork, dried shrimp, black dried Chinese mushrooms, radish, water chestnut, bamboo shoot, and green peas. Instructions

1.Preheat the oven to 325°F (162°C).
2.Rinse the turkey and pat dry with paper towels. Place it in a roasting pan and rub it all over with salt and crushed roasted sichuan peppercorn.
3.To make the stuffing, rinse the glutinous rice in cold water until the water runs clear. Place the rice in a large pot and add enough water to cover. Bring to a boil and then reduce the heat to low. Simmer, covered, for 15-20 minutes, or until the rice is tender.
4.In a large wok or skillet, heat some oil over medium-high heat. Add garlic powder and onion powder and stir until fragrant. Add Chinese pork sausage, duck liver sausage, Chinese barbecue pork, dried shrimp, black dried Chinese mushrooms, radish, water chestnut, bamboo shoot, and frozen green peas. Stir and cook until everything is evenly mixed and heated through.
5.Add the cooked rice to the wok or skillet. Stir and cook for a few more minutes, until everything is evenly mixed. Add oyster sauce, white pepper, and salt to taste.
6.Stuff the turkey with the rice mixture. Tie the legs together with kitchen twine and tuck the wings under the body of the turkey.
7.Roast the turkey for about 3-4 hours, or until the internal temperature of the thickest part of the turkey reaches 165°F (74°C).
8.Remove the turkey from the oven and let it rest for at least 20 minutes before carving.
9.Serve with pine nuts as a garnish if desired.
