Ingredients

1 lb shrimp , small size ( fresh )
5 teaspoons coarse salt
1 egg white
2 tablespoons tapioca starch ( substitute cornstarch )
4 teaspoons sesame oil
1 teaspoon granulated sugar
1 dash white pepper
16 ounces firm tofu ( firm recommended for frying )
1/3 cup chicken stock ( Option , Won Ton or chicken powder )
1 tablespoon light soy sauce
1 tablespoon rice wine
1 tablespoon bean sauce ( Amoy Sichuan Spicy Noodle Sauce or other similar types )
1/2 tablespoon garlic , chopped
1/2 tablespoon chili paste with garlic
1/8 teaspoon chili pepper flakes ( optional )
2 tablespoons tapioca starch ( substitute cornstarch )
2 scallions ( spring onion , green onion )
4 tablespoons peanut oil
1 tablespoon grated ginger
2 cups plus cooked rice ( Optional Yellow or white rice )
Chinese Tofu and Shrimp Stir-Fry is a classic Chinese dish that is quick and easy to make. It is a healthy meal that is packed with protein, essential vitamins, and minerals. Instructions

1.Start by peeling and deveining the shrimp.
2.Season the shrimp with 1 teaspoon of salt and egg white, add the tapioca starch, 1 teaspoon of sesame oil, sugar, and white pepper and mix well.
3.Cut the tofu into bite-sized pieces and set aside.
4.In a small bowl, mix the chicken stock, light soy sauce, rice wine, bean sauce, garlic, chili paste with garlic, and chili pepper flakes.
5.In another small bowl, mix 2 tablespoons of tapioca starch with 2 tablespoons of water.
6.Cut the scallions into 1-inch long pieces.
7.Heat the peanut oil in a wok or large pan over high heat.
8.Add the grated ginger and stir for about 15 seconds.
9.Add the marinated shrimp and stir-fry for about 1 minute or until they turn pink.
10.Remove the shrimp from the wok and set aside.
11.In the same wok, add 2 tablespoons of peanut oil and add the tofu.
12.Stir-fry for about 2 minutes or until golden brown.
13.Add the chicken stock mixture to the wok and bring to a boil.
14.Add the scallions, shrimp, and tapioca starch mixture to the wok and stir-fry for another 1 minute or until the sauce has thickened.
15.Serve on a plate with rice.
