8 eggs
1 teaspoon salt
3 cups water

Instructions

1.Gently tap each egg with the back of a spoon to crack the shells without breaking them apart.
2.Place the eggs in a large pot and add 1 teaspoon salt and 3 cups of water.
3.Turn the heat to high and bring the water to a boil. Once boiling, reduce the heat and let simmer for 2 minutes.
4.In a separate pot, add the soy sauce, black soy sauce, 1/4 teaspoon salt, black tea leaves, star anise, cinnamon stick, and tangerine zest. Add 3 cups of water to the pot and bring to a boil.
5.Once boiling, reduce the heat and allow simmering for 5 minutes.
6.Remove the larger pot with the eggs from the heat and let cool for 1 minute.
7.Use a spoon to gently crack the shells all over, making sure not to remove them.
8.Place the eggs back in the pot with the water. Then add the tea mixture and pour enough water to cover the eggs. Cover the pot with a lid.
9.Turn the heat to medium-low and simmer for 40 minutes. Turn off the heat and let the eggs steep in liquid for another 20 minutes to deepen the flavors.
10.Carefully remove the eggs from the pot and let cool on paper towels. Then gently peel the shells and serve.
