Ingredients

1 lb pork tenderloin , cut into bite-sized cubes
1 tablespoon rice wine or 1 tablespoon dry sherry
2 teaspoons soy sauce
1/4 teaspoon szechwan pepper or 1/4 teaspoon fresh ground black pepper
2 -3 cups peanut oil or 2 -3 cups vegetable oil , for frying
1 cup ketchup
1/4 cup sugar
1/4 cup cider vinegar
1/2 cup chicken stock
1 tablespoon soy sauce
2 teaspoons dark sesame oil
1/2 teaspoon chili-garlic sauce
1/3 cup unbleached all-purpose flour
2 tablespoons cornstarch
1 egg white
1 tablespoon vegetable oil
1 pinch salt
1 garlic clove , minced
1 green bell pepper , cut into 1-inch squares
1 red bell pepper , cut into 1-inch squares
1 small onion , cut into 1/2-inch slices
5 slices pineapple , cut into 1-inch squares

2 green onions , thinly sliced , for garnish

Instructions

1.In a small bowl, mix together the rice wine, 2 tsp soy sauce, and szechwan pepper/black pepper. Add in the pork cubes and marinate for 15 minutes.
2.In another bowl, mix together the ketchup, 1/4 cup sugar, cider vinegar, chicken stock, 1 tbsp soy sauce, dark sesame oil, and chili-garlic sauce.
3.In a shallow dish, lightly beat the egg white and 1 tbsp vegetable oil together. In another dish, mix together the flour, cornstarch, and salt.
4.Heat 2-3 cups of peanut oil/vegetable oil in a wok until hot. Dip the marinated pork cubes in the egg white mixture, then coat in the flour mixture. Fry the pork cubes in batches until golden brown and crispy. Drain on paper towels.
5.In a separate wok, heat a tablespoon of oil over high heat. Stir-fry the garlic, green and red bell peppers, onion, and pineapple for 1-2 minutes. Reduce heat to medium, then add in the sauce mixture. Stir until thickened. Add in the fried pork, stirring until the pork cubes are coated in the sauce. Serve with white rice and garnish with green onions.
