Ingredients

1/2 lb uncooked small shrimp , peeled , deveined and halved lengthwise
1 tablespoon minced peeled fresh ginger
2 teaspoons soy sauce
1 teaspoon oriental sesame oil
1/3 cup all-purpose flour

1/2 cup celery , cut in 1-inch julienne
1/4 cup minced green onion
1 tablespoon slivered peeled fresh ginger
1 1/2 teaspoons peanut oil
fresh ground pepper
2 tablespoons peanut oil ( for frying , about )
1/4 cup soy sauce
1/4 cup thinly sliced green onion
1 tablespoon balsamic vinegar or 1 tablespoon red wine vinegar
1 teaspoon oriental sesame oil
1 teaspoon minced peeled fresh ginger

Instructions

1.In a large bowl mix flour, baking powder, and salt.
2.Add the eggs, peanut oil and 3/4 cup of water, whisk it well until it comes together as a smooth batter.
3.Add the minced ginger, minced green onion and julienne celery to the batter. Mix it well.
4.Heat a non-stick frying pan over medium heat. Add 1 tablespoon of peanut oil.
5.Place a spoonful of the mixture in the hot frying pan, and flatten it lightly.
6.Cook for 1-2 minutes until the bottom is golden, flip it over, and cook for an additional minute.
7.Mix soy sauce, green onions, balsamic vinegar, sesame oil, and fresh ginger in a bowl. The soy-ginger sauce is ready.
8.Serve the pancakes hot with soy-ginger sauce on top.
