Ingredients

3 - 3 1/2 lbs fresh side salmon ( skin left on , bones removed with tweezers or needle-nosed pliers )
2 1/2 tablespoons sugar
2 1/2 tablespoons roasted szechwan salt and pepper
1 dash black pepper
1/4 cup fresh ginger , very finely julienned
1/2 cup fresh cilantro , coarsely chopped ( leaves and stems )

Instructions

1.Clean the salmon under cold running water, pat dry with paper towels, and set aside.
2.In a small bowl, mix together the sugar, roasted szechwan salt and pepper, and black pepper.
3.In a large, shallow dish, create a layer of half the ginger and half the cilantro on the bottom.
4.Sprinkle half the seasoning mix over the ginger and cilantro.
5.Place the salmon skin-side down on top of the ginger and cilantro.
6.Sprinkle the remaining seasoning mix over the salmon.
7.Add the remaining ginger and cilantro on top of the salmon.
8.Cover the dish with plastic wrap.
9.Place a flat, heavy object on top of the salmon to weigh it down.
10.Refrigerate for 72 hours, turning the salmon over every 12 hours to redistribute the marinade.
11.Once the salmon is fully cured after 72 hours, remove it from the refrigerator and discard the marinade, ginger, and cilantro.
12.Slice the salmon diagonally into thin slices and serve.
