2 tablespoons oil
200 g pork fillets
200 g fresh prawns , uncooked
3 teaspoons cornflour
1 tablespoon shaosing Chinese wine or 1 tablespoon dry sherry
1/2 teaspoon salt
3 dried Chinese mushrooms
1/4 cup diced bamboo shoot
1 tablespoon finely chopped spring onion
1/2 teaspoon sesame oil
1 teaspoon sugar
1 tablespoon cornflour , dissolved in 1/4 cup water
1/2 cup sugar
1 cup hot water
3 cups glutinous-rice flour
sesame seeds
oil ( for deep frying )
Chinese Sticky Rice Dumplings, also known as 'zongzi', are a popular traditional Chinese snack made of glutinous-rice flour dough and flavorful fillings. They are usually wrapped in bamboo or banana leaves and cooked by steaming or boiling. This recipe features a filling made of pork, prawn, mushrooms, and various Chinese spices such as shaosing Chinese wine and sesame oil, which give the dumplings a fragrant and savory taste. Instructions

1.Soak the mushrooms in hot water for 30 minutes and chop them into small pieces.
2.Cut the pork and prawns into small pieces.
3.Mix the pork and prawns with cornflour, shaosing Chinese wine or dry sherry, and salt.
4.Add the mushrooms, bamboo shoot, spring onion, sesame oil, and sugar to the pork and prawn mixture and mix well.
5.Make the batter by mixing glutinous-rice flour with 1 cup hot water. Knead the dough until it’s smooth and divide it into small portions.
6.Roll each portion into thin and round dumpling ovals.
7.Place 1 tablespoon of filling in the center of each oval. Fold the edges of the oval around the filling and press the edges together to seal the dumpling.
8.Sprinkle some sesame seeds over the dumplings.
9.Heat the oil in a wok and deep-fry the dumplings until golden brown. Drain off the excess oil and serve the dumplings hot.
