1 egg , beaten

50 dumpling wrappers
1 cup vegetable oil for frying
1 quart water , or more as needed

Instructions

1.In a large mixing bowl, combine soy sauce, rice vinegar, chives, and sesame seeds for the dipping sauce. Set aside.
2.In another large mixing bowl, combine ground pork, garlic, egg, chives, soy sauce, sesame oil, and ginger. Mix well.
3.Place a dumpling wrapper onto a work surface and spoon a small amount of the pork mixture into the centre of the wrapper.
4.Wet the edges of the wrapper with water and then fold in half, pressing the edges together to seal.
5.Repeat with remaining wrappers and filling.
6.Heat vegetable oil in a large pan until hot. Add dumplings and fry for 2-3 minutes until they are golden brown and crispy on both sides.
7.Add water to the pan, cover with a lid, and let the dumplings steam for another 5 minutes until cooked through and tender.
8.Serve hot with the dipping sauce.
