Chinese Pork Buns (also known as Cha Siu Bao) are a traditional Chinese pastry that consists of a fluffy, steamed bun filled with tender, flavorful pork. They are a staple street snack in Chinatowns worldwide, and are made in a variety of fillings ranging from pork belly and barbecue, to chicken and sweet bean paste. Chinese Pork Buns are considered a comfort food and are often enjoyed as a breakfast or as a midday snack. Instructions

1.To make the dough, combine flour, sugar, warm water, and yeast in a large bowl. Mix until all ingredients are well combined and dough forms.
2.Place dough on a lightly floured surface and knead for 10-12 minutes until smooth. Place in a lightly greased bowl and cover with a clean, damp dish towel. Let it rise in a warm place for about 2 hours or until it has doubled in size.
3.To make the filling, heat shortening over medium heat in a skillet. Add the chopped pork and cook until it’s lightly browned.
4.Mix together soy sauce, hoisin sauce, sugar, soy sauce, and oyster sauce in a bowl. Add the mixture to the skillet with pork, stirring everything until combined. Add water and stir. Let it boil for a few minutes, stirring occasionally, then let it simmer for another 10 minutes. In a small bowl, mix cornstarch with water and add it to the skillet. Stir everything until the sauce thickens, then let it cool.
5.On a lightly floured surface, form the dough into a long cylinder, then slice it into 24 pieces. Flatten each piece with palms, then use a rolling pin to make the flat rounds. Put a spoonful of filling in the center of each round. Bring the edges of the dough up and around the filling, sealing the ends together and forming a ball.
6.Place the sealed buns on a baking sheet and let them rest for about 15 minutes. Meanwhile, preheat oven to 350°F. Brush the tops of buns lightly with oil and bake them for 20-25 minutes, or until golden brown.
