12 ounces fresh bean curd
8 medium black dried Chinese mushrooms
3 tablespoons oil
1 scallion , 1 1/2inch shreds
2 slices gingerroot , quarter sized peeled shredded
1 tablespoon dry sherry
2 tablespoons dark soy sauce
1/2 teaspoon sugar
1/2 cup mushroom liquid , see note
1 tablespoon dark sesame oil
Chinese Mushroom Smothered Bean Curd Aka Tofu is a popular and easy-to-make vegetarian dish in China. Instructions

1.Soak black dried Chinese mushrooms in warm water until soft and slice them finely after squeezing out the excess water.
2.Clean and slice the bean curd into small cubes and set aside.
3.Heat oil in the wok or frying pan and add scallion shreds and gingerroot till fragrant, then add mushrooms and stir-fry until cooked.
4.Add sherry, dark soy sauce, sugar, and mushroom liquid, stir well.
5.Put the bean curd pieces into the frying pan and stir well until the bean curd is fully covered with the sauce. Pour in sesame oil, and continue to stir-fry to let the sauce be fully absorbed in the bean curd.
