Ingredients

1/2 cup cornstarch

3 lbs boneless skinless chicken , cut into chunks
1/4 cup soy sauce
1 egg , beaten
1 cup cornstarch
2 cups sliced green onions
8 small dried hot peppers , seeds removed ( Get these in the produce section in a grocery store )

Instructions

1.In a small bowl, mix 1/2 cup cornstarch with water to form a smooth paste.
2.Add minced garlic, minced ginger, sugar, soy sauce, white vinegar, and sherry wine. Stir until smooth and set aside.
3.In another bowl, add the beaten egg and 1/4 cup soy sauce and mix well.
4.Dip the chicken chunks in the egg mixture, and then coat with cornstarch.
5.In a large skillet or wok, heat the oil over medium-high heat and add chicken chunks.
6.Cook until the chicken is no longer pink inside, about 8 minutes.
7.Remove chicken from the skillet and set aside.
8.Add green onions and dried hot peppers to the skillet and stir fry until onions are wilted, about 2 minutes.
9.Return chicken to skillet and add the cornstarch mixture.
10.Cook and stir until the sauce thickens and the chicken is well coated.
11.Serve hot over white rice or noodles.
