Ingredients

2/3 cup of cut pork loin , cut in thin slices ( matchstick size )

1/3 cup dried black fungus ( shredded )
4 tablespoons red wine vinegar

2 tablespoons peanut oil
1/2 cup of cut bamboo shoot ( cut matchstick size )
4 cups chicken broth
2/3 cup firm tofu ( cut matchstick size )
2 eggs
2 tablespoons cornstarch ( mixed with 1/4 cup of water )
1 teaspoon garlic and red chile paste ( If you like things really spicy add in 2 teaspoons )

Instructions

1.Soak the black mushrooms in a bowl of warm water for 30 minutes until they are softened. Squeeze out water and slice them. Separate stems and caps

3.In a large pot, heat the peanut oil over medium-high heat. Add pork and stir-fry for 1-2 minutes until cooked.
4.Add the mushrooms and fungus, bamboo shoots, chicken broth, soy sauce, kosher salt, sugar, and red wine vinegar. Bring it to a boil then reduce heat and simmer for 10-15 minutes.
5.Add garlic and red chile paste (if you want it spicy), then the tofu.
6.Mix cornstarch with 1/4 cup of water and stir it into the soup. Simmer until the soup thickens slightly.
7.Beat eggs in a bowl then slowly pour them into the soup, stirring the soup with chopsticks or fork to create egg ribbons.
8.Serve and enjoy!
