4 lbs pork spareribs , trimmed St. Louis-style membrane removed cut in half across the bone
2 1/2 quarts water
3/4 cup mushroom soy sauce or 3/4 cup regular soy sauce

3 star anise pods
3/4 cup unpeeled fresh ginger , rough chopped
6 tablespoons sugar
6 tablespoons reduced sodium soy sauce
1/2 cup Chinese red vinegar or 1/2 unseasoned rice vinegar
1 tablespoon fish sauce
vegetable oil ( for cooking )
1 cup cornstarch
3 tablespoons garlic , minced
1/2 cup Thai basil or 1/2 cup basil leaves

Instructions

2.Bring to a boil and add the pork spareribs.
3.Reduce heat and simmer for 1 hour until the pork is tender.

6.Remove from pan and set aside.
7.In a separate pan, add more vegetable oil and garlic and heat until fragrant.
8.Add the Thai basil and sauté for 2 minutes.
