Ingredients

3 lbs salmon fillets
1 tablespoon olive oil
2 teaspoons Chinese five spice powder
1 tablespoon brown sugar
1 teaspoon lime zest
1/2 lime , juice of
1/2 teaspoon garlic powder
1 teaspoon crushed red pepper flakes ( optional )
salt and pepper
1 tablespoon sesame oil
2 cups sliced shiitake mushrooms
2 teaspoons peeled grated fresh gingerroot
4 cups sliced bok choy , steamed

Instructions

1.Preheat the oven to 425F (220C) and line a baking sheet with parchment paper.
2.In a small bowl, combine olive oil, Chinese five spice powder, brown sugar, lime zest, lime juice, garlic powder, crushed red pepper flakes, salt and pepper.
3.Rub the spice mixture all over the salmon fillets and place them on the prepared baking sheet.
4.Bake the salmon for 12-15 minutes or until just cooked through.
5.While the salmon is cooking, heat sesame oil in a large skillet over medium heat.
6.Add sliced shiitake mushrooms and grated ginger root, and sauté for 5-6 minutes or until tender.
7.Serve the baked salmon fillets with the sautéed mushrooms and steamed bok choy on the side.
