Ingredients

60 gyoza skins ( dim sum wrappers )
water or broth , for sealing and steaming
cornstarch , for sealing
peanut oil ( for frying )
1 lb ground chicken ( read NOTE ) or 1 lb ground lean pork ( read NOTE )
2 tablespoons tamari
1 tablespoon sherry wine or 1 tablespoon rice wine
1/2 teaspoon sugar
2 -3 green onions , sliced thinly
1 teaspoon freshly grated ginger
2 garlic cloves , finely minced
1 carrot , peeled and minced
1 teaspoon regular sesame oil
1 egg , slightly beaten
1 tablespoon cornstarch
1/4 cup tamari
1/4 cup rice vinegar
1/2 teaspoon freshly grated ginger
1/2 teaspoon toasted sesame oil
3 slices green onions

Instructions

1.In a large bowl, combine the ground chicken (or pork), tamari, sherry (or rice wine), sugar, green onions, ginger, garlic, carrot, and sesame oil. Mix well.
2.Add the beaten egg and cornstarch to the meat mixture. Mix thoroughly.
3.In another bowl, whisk together the tamari, rice vinegar, ginger, and sesame oil.
4.To fill the gyoza skins, place a small amount of the meat mixture in the center of each skin.
5.Use water or broth to wet the edges of the skin, then fold the skin in half and crimp the edges to seal.
6.To cook the pot stickers, heat enough peanut oil to cover the bottom of a large skillet over medium-high heat. Place the pot stickers in the skillet and cook until the bottoms are golden brown (about 2-3 minutes).
7.Carefully pour enough water or broth into the skillet to come a quarter of the way up the sides of the pot stickers. Cover the skillet and reduce the heat to medium-low. Allow the pot stickers to steam until fully cooked through (about 8-10 minutes).
8.Serve hot with the dipping sauce on the side!
