Ingredients

2 large whole chicken breasts
2 teaspoons salt
1/2 lb fresh Chinese egg noodles
1 1/2 teaspoons peanut oil
3 tablespoons white sesame seeds or 3 tablespoons black sesame seeds
1/4 cup finely-julienned red bell pepper
1 cup finely-julienned peeled carrot
1/2 cup fresh cilantro leaves ( fresh coriander )
1 small cucumber , cut into 2-inch julienne
2 teaspoons peanut butter
2 teaspoons asian sesame paste
2 tablespoons sugar
1/3 cup dark soy sauce
1/3 cup Chinese red vinegar or 1/3 cup balsamic vinegar
2 tablespoons peanut oil or 2 tablespoons corn oil
1 tablespoon sesame oil
1/2 teaspoon chili oil ( to taste )
2 teaspoons minced garlic
1 teaspoon minced peeled fresh ginger
1/4 cup chopped green onion ( spring )
1/4 cup chopped dry roasted peanuts

Instructions

1.Preheat oven to 350 degrees F (180 degrees C).
2.Season the chicken breasts with 1 teaspoon of salt. Roast in the oven for 45-50 minutes or until fully cooked.
3.Once the chicken has cooled, shred it and place it in a large mixing bowl.
4.Cook the egg noodles according to the package instructions. Once cooked, rinse them in cold water and drain well. Toss the noodles with 1 1/2 teaspoons of peanut oil and add them to the mixing bowl with the chicken.
5.In a dry pan, toast the sesame seeds until golden brown, then add them to the mixing bowl.
6.Add red bell pepper, carrot, cucumber, and cilantro to the mixing bowl.
7.In a small bowl, combine peanut butter, asian sesame paste, sugar, soy sauce, vinegar, peanut oil, sesame oil, chili oil, minced garlic, minced ginger, and green onion. Mix well to form the dressing.
8.Drizzle the dressing over the chicken salad and toss well to combine. Serve with chopped roasted peanuts sprinkled on top.
