2 ounces rice sticks ( Asian section in grocery store )
4 tablespoons sugar
2 teaspoons salt
6 tablespoons vinegar
1 teaspoon black pepper
1/2 cup peanut oil
2 tablespoons sesame oil
4 tablespoons peanut oil , for frying rice noodles and roasting almonds
1/2 head lettuce , can be added to cabbage for added flavor

Instructions

1.Preheat the oven to 350° F.
2.In a large skillet, heat 4 tablespoons of peanut oil over medium heat. Add rice sticks and fry until crispy and golden brown. Remove from the skillet and drain on a paper towel.
3.In the same skillet, heat another 4 tablespoons of peanut oil over medium heat and add the sliced almonds. Toast until golden brown, stirring frequently. Remove from the skillet and drain on a paper towel.
4.In a large bowl, whisk together 1/2 cup peanut oil, sesame oil, sugar, salt, vinegar, and black pepper.
5.Add the sliced cabbage, green onions, and lettuce (if using) to the bowl and toss to coat with the dressing. Add the cooked chicken to the bowl and toss gently to combine.
6.Top the salad with the toasted almonds and rice sticks. Serve immediately.
