Ingredients

250 g asparagus , trimmed and cut diagonally into 1-inch pieces
2 navel oranges
1 1/2 cups vegetable oil ( approximately )
4 fresh wonton wrappers , cut into 1/4-inch-wide strips
6 cups Chinese cabbage or 6 cups napa cabbage , finely shredded
2 cups cubed cooked chicken
1 large avocado , cubed
4 green onions , sliced diagonally ( including green tops )
2 tablespoons toasted sesame seeds
2 tablespoons rice wine vinegar
2 tablespoons brown sugar
1 1/2 tablespoons soy sauce
1 tablespoon red chili sauce ( I use hot chili sauce not sweet )
1 1/2 teaspoons grated fresh ginger
1/4 cup vegetable oil or 1/4 cup grapeseed oil
This Chinese Chicken Salad (Aussie Style) is a delicious and colourful salad that's perfect for a healthy lunch or dinner option. Instructions

1.Heat up the oil in a saucepan over a medium heat. Add the wonton strips and fry until golden brown, about 1-2 minutes. Remove with a slotted spoon and place on paper towel to drain.
2.Peel the oranges and slice into thin rounds. Cut the chicken into small, even-sized cubes.
3.In a mixing bowl, whisk together the rice wine vinegar, soy sauce, brown sugar, chili sauce, ginger and vegetable oil to make the dressing.
4.In a separate large mixing bowl, add the Chinese cabbage, asparagus, avocado and green onions. Add the dressing and mix well.
5.Add the chicken and oranges to the bowl and mix again. Serve the salad on a large dish or individual plates, topped with the fried wonton strips and sesame seeds.
