Ingredients

Filling :
3/4 cup chicken stock , or more if needed
1 teaspoon agar-agar flakes
1 piece fresh ginger root , peeled
1 spring onion , sliced
3/4 cup warm water
9 ounces ground chicken
2 tablespoons soy sauce
2 teaspoons cooking wine
1 teaspoon sesame oil
1/2 teaspoon white sugar
1/2 teaspoon freshly ground black pepper
Dough :
1 3/4 cups all-purpose flour
2/3 cup warm water
1 tablespoon vegetable oil

Instructions

1.In a small pot, bring the chicken stock to a boil and dissolve the agar-agar flakes in it.
2.Use a spoon to scoop out the ginger root from the chicken stock and discard it.
3.Add the spring onion to the chicken stock and set it aside to cool.
4.In a large mixing bowl, mix the warm water and flour together to form a dough.
5.Knead the dough for 10 minutes and let it rest for another 30 minutes.
6.In a separate mixing bowl, combine the ground chicken, soy sauce, cooking wine, sesame oil, white sugar, and black pepper together.
7.Once the dough has rested, roll it out to a thickness of 1mm and cut out circles of approximately 8cm in diameter.
8.Add a spoonful of the chicken mixture into the center of each dough circle.
9.Fold the dough circles in half to seal the filling and twist the edges of the dough to create a dumpling shape.
10.Place the dumplings onto a steamer-basket lined with parchment paper and steam them over simmering water for 6-8 minutes, until they are cooked through.
