Ingredients

1 1/2 lbs asparagus
1 lb flank steak , sliced thinly across the grain
3 tablespoons peanut oil
3 tablespoons soy sauce
1 teaspoon grated fresh ginger
3 tablespoons dry sherry or 3 tablespoons chinese rice wine
1 1/2 tablespoons cornstarch
2 -3 garlic cloves , thinly sliced
1 tablespoon fermented black beans , rinsed and chopped
1 pinch salt
1 pinch sugar
1/4 cup chicken broth
Chinese Beef and Asparagus with Black Bean Sauce is a classic Chinese dish that is easy to make at home. The dish is a balanced mix of protein and veggies, with thinly sliced flank steak and tender asparagus cooked in a savory black bean sauce. Instructions

1.Heat a wok or large skillet over high heat.
2.Add 1 tablespoon of peanut oil to the wok, and then add the beef and cook, stirring frequently, until browned. Remove the beef from the wok and set it aside.
3.Add the remaining 2 tablespoons of peanut oil to the wok, and then add the garlic and ginger. Stir-fry for a few seconds.
4.Add the asparagus to the wok and stir-fry for 1-2 minutes, or until tender.
5.Add the fermented black beans and cook for another 30 seconds.
6.In a small bowl, whisk together the soy sauce, dry sherry or rice wine, cornstarch, chicken broth, salt, and sugar. Pour this sauce over the asparagus and stir to combine.
7.Add the beef back into the wok and heat through, stirring constantly.
8.Serve the Chinese Beef and Asparagus with Black Bean Sauce over steamed rice.
