Ingredients

2/3 cup soy sauce
1/2 cup honey
1/2 cup Chinese rice wine ( or sake or dry sherry )
1/3 cup hoisin sauce
1/3 cup ketchup
1/3 cup brown sugar
4 cloves garlic , crushed
1 teaspoon Chinese five-spice powder
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1/8 teaspoon pink curing salt ( optional )
1 boneless pork butt ( shoulder )
1 teaspoon kosher salt , or to taste
Chinese Barbeque Pork (Char Siu) is a traditional dish in Chinese cuisine that has been enjoyed for centuries. It is typically served as a main course or as part of a dim sum spread. Instructions

1.In a bowl, whisk together soy sauce, honey, rice wine, hoisin sauce, ketchup, brown sugar, garlic, five-spice powder, black pepper, cayenne pepper, and pink curing salt.
2.In a resealable bag, add the pork and pour in the marinade. Squeeze the bag to evenly distribute the marinade, then refrigerate overnight.
3.Preheat the oven to 350°F. Remove pork from the marinade, reserving the marinade. Place pork onto a baking sheet and season with kosher salt. Bake for 30 minutes.
4.Increase the oven temperature to 400°F. Brush the reserved marinade onto the pork and bake again for 20-30 minutes, or until cooked through and caramelized. Allow the meat to rest for a few minutes before slicing against the grain.
