Ingredients

1 boneless pork butt
1/2 cup sugar

Instructions

1.Cut the pork butt into 2-inch strips, trimming off excess fat.
2.In a saucepan, whisk together the sugar, soy sauce, hoisin sauce, sherry, white pepper, five-spice powder, sesame oil, ginger, garlic, and ketchup. Cook over medium heat until the sugar dissolves, about 5 minutes.
3.Transfer the marinade to a large resealable bag, add the pork, and seal the bag, pressing out any air. Refrigerate at least 3 hours or up to 24 hours.
4.Preheat the oven to 375 degrees F. Set a wire rack over a foil-lined baking sheet. Remove the pork from the marinade, shaking off excess, and discard the marinade.
5.Place the pork on the wire rack and roast until the internal temperature reaches 135 degrees F, about 20-25 minutes.
6.Increase the oven temperature to 500 degrees F. Brush the pork with honey and continue roasting until the edges are slightly charred and the internal temperature reaches 145 degrees F, about 5-10 more minutes.
7.Remove from oven and let the pork rest for 10 minutes before slicing and serving.
