2 lbs masa dough , made with maseca
2 cups pinto beans , mashed
1/2 red onion , diced
2 lbs pork
salt
3 ancho chilies , stems removed , seeded and blanched
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 cup chopped fresh parsley
6 cloves garlic
Chilorio gorditas are a prevalent dish in Mexico, especially in the Sinaloa region. The chilorio is a condiment made by blending ancho chilies to give a unique flavor and aroma to tender and juicy shredded pork. When paired with gorditas made with masa dough and mashed pinto beans, it creates a delectable snack or a full meal. This classic recipe of gorditas can be modified by adding cheese, guacamole, salsa, or any other preferred toppings. Instructions

1.Preheat the oven to 350F.
2.Take a large pot and fill it with water. Add the pork and cook over medium heat until tender. It may take 1.5 to 3 hours depending on the tenderness of meat.
3.Once the meat is cooked and tender, let it cool down and shred it by hand.
4.Now take the chilies and grind them in a food processor until you get a sauce-like consistency.
5.Heat a pan and add garlic, cumin, oregano, and chile sauce. Sauté for a minute or until fragrant.
6.Add the shredded pork and mix until fully coated with the sauce. Sauté for 5-7 minutes on medium heat and set aside.
7.Divide the masa dough into golf ball-sized portions. Flatten the dough in your palm and add a tablespoon of mashed pinto beans with some diced onions in the center. Fold the dough over to create a ball again.
8.Using a tortilla press or rolling pin, shape the flattened balls into an oval shape.
9.Heat the griddle over medium heat and place the oval gorditas on the griddle. Cook until they turn golden brown from both sides, around 2 minutes each side.
10.Slice the gorditas in the middle and fill them with chilorio. Garnish it with chopped parsley, onions, and lime juice.
