Ingredients

1 large red bell pepper
1 mild red chili pepper
2 tablespoons pine nuts , toasted
2 medium tomatoes , peeled , deseeded and roughly chopped
1/4 - 1/2 teaspoon Tabasco sauce
1 garlic clove , peeled
50 g fresh basil leaves , roughly chopped
8 pieces sun-dried tomatoes packed in oil , chopped
3 tablespoons sun-dried tomato paste
6 -12 tablespoons olive oil
1 -2 ounce pecorino romano cheese or 1 -2 ounce fresh parmesan cheese , grated

Instructions

1.Begin by roasting the red bell pepper and mild chili pepper over a gas flame or in the oven until the skin of the peppers is blackened.
2.Once the peppers are roasted, place them in a bowl and cover it with plastic wrap until the peppers are cool enough to handle.
3.Peel off the blackened skin of the peppers and remove the stem and seeds.
4.In a food processor, combine the roasted peppers, pine nuts, tomatoes, Tabasco sauce, garlic, basil leaves, sun-dried tomatoes, and sun-dried tomato paste.
5.While the food processor is running, slowly drizzle in the olive oil until the pesto reaches the desired consistency.
6.Once the pesto is smooth and creamy, stir in the grated pecorino romano cheese or fresh parmesan cheese.
7.Serve the chilli tomato pesto tossed with your favorite pasta or as a dip with crusty bread slices.
