Ingredients

2 tablespoons olive oil
1/2 finely chopped red onion
3 finely chopped garlic cloves
2 finely chopped small red chilies ( seeded )
1/2 teaspoon smoked sweet paprika
2 lbs mussels , scrubbed and bearded
1/4 cup white wine
1/4 cup dry sherry
1/2 cup crushed canned tomato
1 teaspoon finely chopped thyme
1 teaspoon caster sugar
1/3 cup finely grated manchego cheese
1/3 cup breadcrumbs
1 1/2 tablespoons finely chopped flat leaf parsley ( Italian )

Instructions

1.Heat olive oil in a large pan over medium heat. Add the chopped onion, garlic, and chillies. Cook for 2-3 minutes or until onion is translucent.

3.Add the mussels to the pan and toss around for a minute. Pour in the white wine and sherry and cook for a further 2 minutes.
4.Add the tomato, thyme, caster sugar, and season with salt and pepper. Let everything simmer for another 5-6 minutes or until the mussels open.
5.Meanwhile, in a separate bowl, mix the grated manchego cheese, breadcrumbs, and chopped parsley.
6.Once the mussels have opened, discard any mussels that are still closed. Using a teaspoon, spoon a generous amount of the breadcrumb mixture into each mussel shell.
7.Place the mussels under the grill for a few minutes or until the cheese is bubbly and golden brown.
8.Serve hot with a side salad or a slice of crusty bread.
