6 medium live blue crabs , uncooked ( about 4 1/2 kilo )
125 ml plum sauce
2 tablespoons oyster sauce
1 tablespoon light soy sauce
1 garlic clove , crushed
1 tablespoon fresh ginger , grated
1 tablespoon chili sauce
2 tablespoons peanut oil
1/2 teaspoon sesame oil
125 ml sweet chili sauce
Chilli Plum Crabs are a savory Chinese-style dish that features fresh live crabs stir-fried in a sweet and spicy sauce made with plum sauce, oyster sauce, soy sauce, garlic, ginger, chili sauce, and peanut and sesame oils. Instructions

1.Thoroughly rinse the crabs under cold water to clean them, then cut them into quarters.
2.In a small bowl, mix together the plum sauce, oyster sauce, light soy sauce, garlic, ginger, chili sauce, peanut oil, sesame oil, and sweet chili sauce.
3.Heat a large wok over high heat. When the wok is hot, add the crab quarters and stir-fry for 5-7 minutes until the shells turn orange and the meat is slightly cooked.
4.Add the sauce mixture to the wok, tossing the crabs to coat them evenly. Continue cooking for another 5-7 minutes until the sauce thickens and the crabs are fully cooked.
5.Serve the Chilli Plum Crabs hot over steamed rice or noodles, garnished with chopped cilantro and sliced green onions if desired.
