Chili king prawn skewers are a popular dish in Southeast Asia, where fresh seafood is plentiful. This recipe takes inspiration from Thai cuisine, but with a twist. The spice rub is spiked with nuts, coconut, and fresh coriander, adding extra layers of flavor and texture to the prawns. When skewered and grilled, the prawns become succulent and juicy, and the chili rub forms a crispy crust around the edges. The result is a dish that is both simple and sophisticated, perfect for entertaining or a special weeknight dinner.

Instructions

1.Preheat the grill to high heat.
2.In a small skillet, dry roast the cumin and coriander seeds until fragrant.
3.Grind the roasted seeds into a fine powder using a mortar and pestle or a spice grinder.
4.In a blender, combine the ground spices, chili flakes, green chilies, desiccated coconut, ginger, roasted almonds, pistachios, coconut milk, vegetable oil, warm water, and fresh coriander leaves. Pulse until you have a smooth paste.
5.Skewer four prawns on each skewer and brush the skewers with the paste.
6.Grill the prawn skewers for 3-4 minutes on each side, or until cooked through.
