Ingredients

3 tablespoons olive oil
1 kg beef chuck steak , trimmed of fat , cut into 2cm pieces
1 brown onion , chopped
2 garlic cloves , diced
1 red capsicum , diced
3 teaspoons Mexican chili powder
2 teaspoons ground cumin
2 teaspoons dried oregano
1 teaspoon paprika
800 g diced tomatoes
3 tablespoons tomato paste
1 cup water
420 g canned red kidney beans , rinsed , drained
1/2 cup fresh coriander leaves , chopped
4 flour tortillas
1 cup tasty cheese
1 avocado , diced
sour cream , to serve
Chilli con carne is a classic Mexican dish made of beans, beef, and aromatic spices. It's a hearty and flavorful dish that is typically served with tortilla chips, rice or bread. The dish is believed to have originated in the state of Texas, USA, and made its way down South to Mexico. This recipe is an easy-to-follow take on the traditional recipe with a side of cheese quesadilla triangles. It's perfect for a party or a family dinner. The crispy and cheesy quesadilla triangles compliment the spicy beef stew perfectly.

Instructions

1.Heat 2 tbsp oil in a large saucepan. Add the beef and cook on medium heat until browned, for about 5-7 minutes.
2.Add the onion and garlic, and cook until the onion is soft for about 2-3 minutes.
3.Add red capsicum, Mexican chili powder, ground cumin, dried oregano, and paprika. Cook until the capsicum softens for about 5-7 minutes.
4.Add diced tomatoes, tomato paste, and water. Bring to a simmer and let cook until the sauce thickens, for around 20 minutes.
5.Add kidney beans and chopped coriander. Stir through and cook for another 5 minutes.
6.Preheat oven to 200C. Brush 1 side of each tortilla with oil. Place oiled side down on a baking tray. Sprinkle cheese over tortilla. Fold tortilla in half. Cook in preheated oven until cheese is melted and edges start to brown for about 5-7 minutes. Cut each tortilla in quarters. Serve with chili con carne, avocado, and sour cream.
