Instructions

1.Preheat the oven to 350°F (180°C).
2.To make the chilli, spray a large saucepan with cooking spray and heat over medium-low heat.
3.Add the onions, garlic, and red capsicum and cook for 5 minutes, or until softened but not browned.
4.Add the red kidney beans, borlotti beans, tomatoes, chilies, vegetable stock, tomato paste, and coriander to the pot, and bring to a boil.
5.Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
6.While the chilli is simmering, prepare the spicy tortilla crisps. Cut the tortillas into triangles and arrange them on a baking sheet.
7.Spray the tortilla pieces with cooking spray and sprinkle with the Mexican chili powder.
8.Bake in the oven for 10-12 minutes, or until crispy and golden brown.
9.Serve the chilli with the mashed avocado and the spicy tortilla crisps on top.
