Ingredients

1 tablespoon olive oil
1 onion , finely chopped
1 celery rib , finely chopped
2 garlic cloves , crushed
1 mild red chile , finely chopped

8 tortillas
plain yogurt , to serve

Instructions

1.Heat the oil in a large pan and sauté onion and celery until translucent.
2.Add garlic, red chili, cayenne pepper, coriander and cumin.
3.Cook for 1-2 mins until fragrant, stirring often.
4.Add canned tomatoes and bring to boil, then reduce heat and let simmer, covered, for 20-25 mins.
5.Add the kidney beans, lime juice and fresh coriander to the tomato mixture and stir until warmed through.
6.While chilli is cooking, heat the corn in a frying pan with a bit of oil for 5 minutes until golden brown, and let cool.
7.Mix together the sweetcorn, chopped celery, spring onions, coriander leaves, lime juice and green chili to make corn salsa.
8.To assemble, warm up the tortillas according to the package's instructions, spread some yogurt over them.
9.Add a few tablespoons of chilli bean mixture and top with some corn salsa, then roll up into burritos.
