Ingredients

4 -5 medium spring onions , trimmed and chopped
butter or olive oil
1 large cos lettuce or 2 large butterhead lettuce
250 g fresh garden peas or 250 g frozen peas
1 liter vegetable stock
5 -6 leaves fresh lovage , leaves ( plus 4 more to garnish )
salt and pepper
cream , for garnish ( optional )
This chilled soup is the perfect dish for a hot summer day. Made with fresh lettuce, garden peas and lovage, it's light and refreshing, and packed full of flavor. The soup is easy to make and can be prepared in advance, making it a great option for a summer dinner party. Serve with a crusty bread roll for a simple, yet satisfying meal.

Instructions

1.In a large saucepan, melt the butter or heat olive oil over medium heat.
2.Add the spring onions and sauté until soft.
3.Add the lettuce leaves and cook until wilted.
4.Add the peas, vegetable stock and fresh lovage leaves.
5.Season with salt and pepper.
6.Bring the soup to a simmer and let it cook for about 20 minutes.
7.Remove the soup from the heat and let it cool to room temperature.
8.Transfer the soup to a blender or food processor and blend until smooth.
9.Chill the soup in the refrigerator for at least 2 hours.
10.Serve the chilled soup with a dollop of cream and fresh lovage leaves as garnish.
