2 slices sourdough bread
1 garlic clove , halved
1/3 cup goat cheese , crumbled ( or feta cheese )

Instructions

1.In a medium pot, heat the olive oil over medium heat and cook the chopped onion until tender, about 5 minutes.
2.Add the peas and vegetable broth and bring to a boil. Reduce heat and simmer for about 10 minutes, or until the peas are tender.
3.Add the tarragon and remove from heat.
4.Using an immersion blender or regular blender, blend the pea mixture until smooth.
5.Season with salt and pepper to taste.
6.Preheat the oven to 350°F.
7.Cut the bread into small cubes and toss with the halved garlic and a little bit of olive oil. Toast in the oven until golden brown, about 8-10 minutes.
