Ingredients

1/4 cup olive oil
1 garlic clove , chopped
1 onion , sliced into rings
1 green pepper , seeded and cut into strips
1 red pepper , seeded and cut into strips
1 pinch saffron
1 teaspoon salt
1 teaspoon paprika
1 pinch cayenne
2 cups smoked ham , diced ( serrano )
1 tablespoon tomato paste
1 1/2 cups tomato sauce
Chilindron sauce originates from the Aragon region of Spain and is typically served with meat (most commonly chicken, lamb, or pork) or vegetables. The sauce is made with a combination of peppers, onions, garlic, smoked ham, saffron, and spices. It's a simple but flavorful sauce that can be adjusted to your level of spice tolerance. Instructions

1.Heat olive oil in a large skillet over medium heat.
2.Add garlic, onion, green pepper, and red pepper, saffron and salt. Stir for 5-7 minutes.
3.Add paprika, cayenne pepper, and diced smoked ham. Cook for 5-7 minutes, stirring occasionally, until the ham begins to brown.
4.Stir in tomato paste and tomato sauce until well combined.
5.Cover the pan and simmer for 15-20 minutes, or until the peppers are tender.
