1 can kidney beans , drained & rinsed well
1/4 green cabbage head , shredded
1 onion , sliced
450 g beef sausages , good ones ( I used Heller 's Old Fashioned English Beef sausages )
1 teaspoon dried rosemary , ground
1 teaspoon dried thyme
1 teaspoon sumac
1 tablespoon ketchup
2 tablespoons whole meal flour
1 tablespoon chili powder
1 tablespoon demerara sugar
1 garlic clove , crushed
2/3 cup red wine
2 cups vegetable stock

Instructions

1.Begin by preheating your oven to 180°C/355°F.
2.In a large bowl, whisk together the whole meal flour, chili powder, ground rosemary, dried thyme, sumac, and sugar.

4.Heat a large skillet over medium-high heat and add the sausages. Cook until browned on all sides, then remove from the skillet and set aside.
5.In the same skillet, add sliced onions and cook until softened and slightly browned.
6.Add in shredded cabbage and crushed garlic, cooking until the cabbage is slightly wilted.
7.Pour in red wine and deglaze the skillet, scraping up any browned bits on the bottom.
8.Stir in the vegetable stock and ketchup, then add in the kidney beans.
9.Transfer the sausage mixture to a casserole dish and bake in the oven for 25-30 minutes, or until the sauce is bubbly and the sausages are cooked through.
