2 cans whole green chilies
1 lb shredded monterey jack cheese
2 roma tomatoes , finely diced or cans petite diced tomatoes , drained
1 teaspoon ground ancho chili pepper
2 tablespoons honey or 2 tablespoons sugar
6 eggs
1/2 cup milk
2/3 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cayenne pepper

Instructions

1.Preheat oven to 350°F (175°C)

9.Spread the meringue over the chilli and place back in oven for 10-15 minutes to till the meringue topping is golden brown.
10.Serve hot!
