Ingredients

4 ounces cellophane noodles
3 1/2 tablespoons hoisin sauce
2 tablespoons low sodium soy sauce
3 tablespoons lime juice
1/2 teaspoon chili-garlic sauce ( Huy Fong brand recommended )
1 1/2 tablespoons toasted sesame oil , divided
1 package plain tempeh , diced
1 package button mushrooms , trimmed and sliced
1 lb baby bok choy , thinly sliced on the diagonal
2 cups bean sprouts
6 green onions , thinly sliced
2 1/2 tablespoons fresh ginger , minced
1/2 cup basil , chopped ( garnish )
1/4 cup roasted peanuts , chopped into small pieces ( garnish )

Instructions

1.Cook cellophane noodles according to package directions and set aside.
2.In a small bowl, whisk together hoisin sauce, soy sauce, lime juice, chili-garlic sauce, and 1 tablespoon of sesame oil.
3.In a large skillet, heat remaining sesame oil over medium-high heat and add diced tempeh. Cook for 5-7 minutes until golden brown and set aside.
4.In the same skillet, add mushrooms and cook for 5 minutes until tender. Add bok choy, bean sprouts, green onions, and ginger. Cook for 2-3 minutes until vegetables are wilted but still crisp.
5.Add cooked noodles and tempeh to the skillet with the vegetables and stir to combine.
6.Pour sauce over the noodle mixture and toss to coat evenly. Cook until heated through.
7.Serve garnished with fresh basil and chopped peanuts.
