Ingredients

4 poblano chiles

2 tablespoons butter
1/2 teaspoon ground cumin ( or to taste )

2 tablespoons all-purpose flour
1 chipotle chile , seeded and minced ( canned )
1 teaspoon chipotle adobo sauce ( optional )
2 cups 2 % low-fat milk
1/2 cup dry breadcrumbs

Instructions

1.Preheat broiler
2.Place poblano peppers on a baking sheet, and broil for 5 minutes per side, or until skin is charred and blistered.
3.Place peppers in a bowl and cover with plastic wrap for 5 minutes to let steam loosen skin.
4.Remove stem and seeds and discard.
5.Rinse under cold water and gently rub off the skin.
6.In a skillet, melt butter over medium heat.
7.Add the red bell pepper, green onions, garlic, and corn kernels and sauté until lightly browned.
8.Add beans, chipotle chile, cumin, nutmeg, flour, and cook for 5 minutes over medium heat.
9.Stir in 1/2 cup of cheese, pine nuts, cilantro, and 1/2 tsp of salt.
10.Fill poblano peppers with mixture and arrange them in a greased baking dish.
11.Pour milk over stuffed poblano peppers.
12.Mix breadcrumbs, remaining cheese, and 1/2 tsp of salt together, and sprinkle on top of peppers.
13.Bake 20-25 minutes or until the cheese is golden brown.
