2 lbs serrano chilies
6 cups cider vinegar
salt

1 lime , zest of , grated
2 tablespoons vegetable oil
2 medium white onions , peeled , sliced
6 garlic cloves , peeled

Instructions

1.Rinse and pat dry the chilies.
2.Using a paring knife, cut a small slit in the side of each chili.
3.In a large pot, combine the vinegar, 1/4 cup salt, oregano, bay leaves, peppercorns, clove, ginger, cinnamon, thyme, marjoram, and lime zest. Bring to a boil.
4.Add the chilies to the pot and cook for 30 seconds.
5.Using a slotted spoon or tongs, transfer the chilies to a large glass jar.
6.Add the vegetable oil to the pot and heat until shimmering.
7.Add the onions and garlic and cook until tender and translucent, about 5 minutes.
8.Pour the contents of the pot into the jar with the chilies.
9.Allow the jar to cool to room temperature, then cover and refrigerate for at least 12 hours or up to 5 days before serving.
