Kimchi is a traditional Korean dish made with fermented cabbage and a variety of spices. This version, called Chilehead's Kimchi, is a spicy twist on the classic recipe. The napa cabbage is first soaked in a saltwater brine to help draw out excess liquid and create a crunchy texture. The cabbage is then coated in a flavorful paste made with chili powder, garlic, and ginger. The mixture is left to ferment for a few days, which gives it a tangy and slightly sour taste. Chilehead's Kimchi is a great side dish to serve with grilled meats, rice bowls, or as a condiment to add some heat to any meal.

Instructions

1.Cut the napa cabbage into bite-sized pieces and rinse well.
2.In a large bowl, dissolve 1/3 cup salt in 4 cups of water and add the cabbage. Let it sit for 2 hours, stirring occasionally.
3.After 2 hours, rinse the cabbage thoroughly and shake off excess water.
4.In a separate bowl, mix together the remaining ingredients (except for the green onions) to make a paste. Add the cabbage and green onions, and mix well to coat.
5.Transfer the mixture to a jar and press down firmly to remove any air pockets. Cover the jar and let it sit at room temperature for 1-2 days.
6.After 1-2 days, transfer the jar to the refrigerator. The kimchi will be ready to eat after 3-4 days.
