Ingredients

24 ounces tomatillos ( canned , including liquid )
3 1/2 ounces salsa verde ( hot )
3 -4 boneless skinless chicken breasts or 4 pieces lean pork
1 onion , diced
3 garlic cloves , minced
16 ounces mild green chilies ( diced , including canning liquid , Hatch preferred )
1/2 lime , juice of
1/4 cup cilantro , chopped
8 medium potatoes , cubed ( optional )

Instructions

1.Preheat oven to 375°F.
2.In a large dutch oven or oven-safe pot, heat oil over medium-high heat.
3.Add diced onions and minced garlic to the pot and sauté for 2-3 minutes until onions are translucent.
4.Add in diced green chiles, enchilada sauce, salsa verde, and spices (cayenne pepper, dried oregano, ground coriander, ground cumin, chili powder) and mix well.
5.Stir in cubed chicken or pork and mix well.
6.Add the canned tomatillos (including liquid) and lime juice to the pot and stir.
7.Bring the mixture to a boil and cover the pot.
8.Place the dutch oven or oven-safe pot into the preheated oven and bake for 40 minutes.
9.Remove the pot from the oven and stir in chopped cilantro.
10.Serve hot with tortillas, yogurt or sour cream, and additional cilantro for garnish.
