Ingredients

4 large fresh poblano chiles
1/2 lb monterey jack cheese , coarsely grated
1 1/2 lbs tomatoes , coarsely chopped
1 cup water
1/4 cup chopped white onion
2 large garlic cloves
1 tablespoon distilled white vinegar
1 teaspoon sugar
1 teaspoon dried oregano
2 tablespoons corn oil or 2 tablespoons other vegetable oil

Instructions

1.Preheat your broiler to high.
2.Lay your fresh poblano chiles on a baking sheet and place them under the broiler.
3.Turn the chiles every few minutes until the skin is black and blistered on all sides.
4.Once done, take them out of the oven and put them in a ziplock baggie to cool for 15 minutes.
5.In the meantime, make the tomato sauce by blending chopped tomatoes, water, chopped onion, garlic, vinegar, sugar, and oregano until smooth.
6.Heat up oil in a saucepan and pour the blended mixture into it.
7.Cook the tomato sauce for 15 minutes over low heat.
8.Peel your chiles and gently pull out the seeds to make room for the cheese stuffing. Stuff each chili with roughly 1/2 cup of grated Monterey Jack cheese.
9.In a separate bowl, beat egg whites until stiff peaks form. In another bowl, beat egg yolks with flour until smooth.
10.Fold in the egg whites to the yolk and flour mixture.
11.Heat up oil in a skillet over medium heat.
12.Dip each chili in the egg mixture to coat.
13.Fry the chilies until golden brown on each side. Serve with tomato sauce.
