Ingredients

1/2 lb poblano peppers or 1/2 lb anaheim chili
2 tablespoons vegetable oil
1 cup finely chopped white onion
1/4 teaspoon cayenne
2 tablespoons all-purpose flour
1 large tomatoes , peeled , seeded , and diced
1 cup cream
1 1/2 cups grated extra-sharp cheddar cheese ( added at the suggestion of a reviewer which I think is a good idea and improved this immensely )
1 cup grated monterey jack pepper cheese
Chile con queso, or simply cheese chili, is a popular appetizer and a classic Tex-Mex dish. It is usually made with melted cheese blended with chili peppers and other ingredients. Instructions

1.Preheat broiler.
2.Spread the poblano peppers or anaheim chilies on a baking sheet. Broil until blackened on all sides, turning occasionally (about 10-12 minutes).
3.Remove from the oven and place into a bowl, covering with plastic wrap. Let steam for 10 minutes.
4.In a medium-sized saucepan, heat vegetable oil over medium-high heat. Add onions and cayenne, stirring frequently until the onions are translucent (about 4-5 minutes).
5.Add flour and keep stirring for an additional 2 minutes.
6.Mix in the tomatoes and their juices. Cook, stirring for an extra minute.
7.Reduce the heat to low and add in the cream, stirring until combined.
8.Peel the skins off the cooled peppers and remove the stems and seeds.
9.Dice them and add them to the saucepan. Mix well.
10.Add both of the cheeses and stir until they are fully melted and combined.
11.Serve hot with tortilla chips or fresh bread slices.
