Ingredients

6 dried chilies , stemmed and seeded ( New Mexico , Anaheim or Ancho )
1 can fire-roasted diced tomatoes
1 large onion , coarsely chopped
4 garlic cloves , coarsely chopped
4 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon salt
12 ounces lager beer
1 tablespoon canola oil
2 - 2 1/2 lbs beef brisket , trimmed of excess fat
1 can pinto beans , rinsed & drained

Instructions

1.Preheat oven to 325°F (160°C).
2.Soak the dried chilis in warm water for 10 minutes until softened then drain well.
3.In a blender, puree the soaked chilis, tomatoes, onion, garlic, chili powder, cumin and salt until a smooth paste is formed.
4.In a Dutch oven over medium-high heat, heat the canola oil and add the brisket.
5.Brown each side of the brisket until slightly crispy, then remove the brisket and set aside.
6.In the same pot, add the chili paste and stir until fragrant, then pour in the beer.
7.Return the brisket to the pot and bring to a simmer.
8.Cover and transfer to the preheated oven for 2 1/2 - 3 hours until the meat becomes tender.
9.Thirty minutes before the end of cooking, add the drained pinto beans to the pot and stir.
10.Remove the Dutch oven from the oven. Skim the fat off the top and transfer the brisket to a cutting board. Let it rest for 10 minutes before carving it into thin slices. Serve with the pinto beans and sauce.
