2 lbs spareribs , country-style cut into 2-inch pieces
2 dried ancho chiles
1 cup water
1 garlic clove , peeled
1/8 teaspoon cumin seed , crushed
6 ounces tomatillos , with husks well rinsed ( about 8 medium )
1 dash sea salt

Instructions

1.Preheat the oven to 450°F.
2.Place the spareribs on a baking sheet with a wire rack, and season with salt.
3.Roast the ribs in the oven for 20 minutes, then reduce temperature to 350°F.
4.In a small saucepan, bring the water to a boil and add the dried chiles. Let them simmer for 5 minutes, then remove from the heat.
5.In a food processor, blend the garlic, cumin, and tomatillos until smooth.
6.Add the boiled chiles and blend until combined.
7.Spread the tomatillo sauce over the ribs and bake in the oven for another 45 minutes, until the meat is tender and cooked through.
