8 flour tortillas
1 tablespoon olive oil
1 package vegetarian chicken pieces
1 bell pepper , sliced into strips
1 medium onion , halved and then sliced
1 tablespoon red pepper flakes
1 teaspoon adobo seasoning
16 ounces refried beans
14 ounces enchilada sauce
1 1/2 cups of grated cheddar cheese
Chik'n Enchiladas are a vegetarian twist on a classic Mexican dish. The filling is made up of vegetarian chicken, bell peppers, onions, and beans, and it's all wrapped up in a soft flour tortilla and smothered in enchilada sauce and melted cheese. Though not as authentic as traditional enchiladas, this recipe is an easy, delicious, and healthy way to enjoy classic Mexican flavors without the meat.

Instructions

1.Preheat oven to 375°F (190°C).
2.In a pan, heat olive oil over medium-high heat. Add vegetarian chicken pieces, bell pepper, onion, red pepper flakes, and adobo seasoning. Cook until chicken is lightly browned and vegetables are tender, about 10 minutes.
3.In another pan, heat refried beans over medium heat until heated through, stirring occasionally.
4.Pour half of enchilada sauce into a baking dish. Place a tortilla in the dish, spoon about 3 tablespoons of chicken mixture and 2 tablespoons of beans into the center of the tortilla, and roll up. Repeat with remaining tortillas and fillings, placing them tightly in the dish.
5.Pour remaining enchilada sauce over the tortillas and top with grated cheddar cheese.
6.Bake in the preheated oven until the cheese is melted and bubbly, about 15-20 minutes.
