Ingredients

6 chicken thighs , on bone
3 lbs stewing beef
5 -6 medium hot house tomatoes
2 cans tomato paste
1/2 red pepper
1 -2 jalapeno
1 red onion
1 white onion
5 garlic cloves
3 tablespoons hot sauce ( optional )
2 tablespoons salt
1/2 cup vegetable oil
fresh ground black pepper
fresh basil
fresh cilantro
fresh spinach
fresh thyme
Chidis' Igbo Stew is a traditional Nigerian dish that has been passed down for generations in the Igbo community. Instructions

1.Wash and pat dry the chicken and beef. Cut the beef into small bite-sized pieces.
2.Blend the tomatoes, red pepper, jalapeno, red onion, and white onion in a food processor until smooth.
3.Heat the vegetable oil in a large pot over medium-high heat.
4.Add the beef and chicken and cook for about 5 minutes on each side until browned.
5.Remove the chicken and beef from the pot and set aside.
6.Add the blended tomato mixture to the pot and cook for about 10 minutes until it thickens.
7.Add the tomato paste and hot sauce (optional) and stir well.
8.Return the chicken and beef to the pot and add salt and fresh ground black pepper to taste.
9.Lower the heat to medium-low, cover the pot, and simmer for 45 minutes to an hour.
10.Stir the stew occasionally to prevent burning.
11.Once the meat is tender, add fresh basil, cilantro, spinach, and thyme to the pot and cook for another 5-10 minutes.
12.Serve hot over white rice.
