3 beets , trimmed ( about 3/4 lb . )
2 cups cubes French bread
cooking spray
6 cups torn chicory lettuce ( curly endive )
blue cheese dressing

Instructions

1.Preheat your oven to 400°F (200°C).
2.Prepare the beets by wrapping them individually in foil and roasting in the hot oven for about 45-50 minutes, or until they are tender. Then remove from the oven and let them cool.
3.While the beets are roasting, prepare the bread cubes by spreading them on a baking sheet lined with parchment paper and coating them with cooking spray. Toast the bread cubes in the oven for 5-10 minutes, until they turn golden brown.
