1/4 1/4 cup chicken broth or 1/4 cup water
2 -6 teaspoons fresh anaheim chilies , chopped ( or serrano , jalapeno , fresno chiles , to taste )

4 flour tortillas or ( 6 inch ) corn tortillas
1 1/2 cups lettuce , shredded ( iceberg is good )
1 avocado , peeled and thinly sliced
1 large tomatoes , chopped
3/4 cup cheddar cheese , shredded
3/4 cup monterey jack cheese , shredded
1/3 cup green onion , sliced
1/3 cup black olives , sliced or 1/3 cup green olives

Instructions

1.Preheat the oven to 375°F.
2.In a large skillet over medium heat, cook chickpeas, chicken broth or water, and chopped green chilies together until heated through. Mash the chickpeas with a potato masher. Add salt and pepper to taste.
3.Heat cooking oil in a large skillet over medium heat. Fry the tortillas one at a time until crispy and lightly browned. Drain on paper towels.
4.Spread the mashed chickpeas onto each tortilla shell and top with shredded lettuce, sliced avocado, chopped tomato, shredded cheddar and Monterey Jack cheeses, sliced green onions, and sliced olives.
5.Bake the tostadas in the oven until the cheese is melted and bubbly, about 5 minutes.
6.Serve with sour cream, salsa, and guacamole.
